Crazy Clams
Are you ready for Crazy Drunk Clams? Crazy Clams are the perfect treat and entertaining for your guest as you cook them on the grill. The clams are tender and delicious.
Ingredients:
- 24 Little Neck clams, cleaned and rinsed
- 3⁄4 cup of water
- 3⁄4 cup Larger Beer ( I like Yuengling Lager)
- 6 cloves fresh garlic, minced
- 2 tablespoons butter
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons oregano
- 1⁄2 teaspoon crushed red pepper flakes
- juice of 1 lemon
Directions:
- Wash and clean clams to remove dirt deposits.
- Preheat the grill to 300 degrees F.
- Combine the water,beer, garlic, butter, olive oil, oregano, pepper flakes and clams in a large
covered pot on the side burner
- Bring the liquid to a boil
- Once the clams pop open place them in the grill to keep them warm; set aside until all clams are ready.
- Try not to spill the juice from the clams.
- Discard any clams that do not open after 10 minutes of cooking.
- Stir the parsley and lemon juice into the liquid, and add the clams back to the pot.
- Remove the pot from heat and mix gently, coating all of the clams in broth.
- Serve with crusty Italian bread.
