Red Beans and Rice
Red Beans and Rice. This is a classic dish great with beer and you can make it without meet but it is better flavor with the sausage.
Ingredients:
- 1 Sixteen once can of Red Kidney Beans (Undrained)
- 1 medium onion
- 1-2 Cloves of garlic
- 1/2 pound of pre-cooked polish sausage or kielbasa and /or ham shank
- 1-2 chili pepper and /or hot red peppers
- sea salt, black pepper, tabasco and any other seasonings of choice to taste
- cooking oil or butter
Directions:
- Heat oil or melt butter in a large kettle or pot
- Add onions and garlic and sauté until clear and golden brown
- Add beans, undrained, along with the sausage, ham shank and peppers.
- Add enough water or beer or dry white wine to cover beans.
- Bring to boil, then cover, reduce heat, and simmer for 1/2 hours adding water or more beer or wine as necessary.
- Remove 1/2 cup of beans and mash with a fork or puree in foog processor.
- Add the puree to the pot and stir to thicken.
- Add seasonings to taste.
- Cook for an additional 15-30 minutes.
- Serve over rice.
- Have tabasco available for seasoning when served in bowl.
