Sauces
These are some of my favorite Sauces that I use on my recipes. With any sauce you can add-lib and experiment with the ingredients to suite your taste.
BBQ Sauce
(great on ribs and chicken)
- 1 ½ cups apple cider vinegar
- ½ cup ketchup
- 1 tablespoon brown sugar
- 1 teaspoon salt
- ½ teaspoon crushed red pepper
Spicy Dipping Sauce
(great for Scallops)
- 4 large garlic cloves thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon white sugar
- ½ teaspoon crushed red pepper flakes
- 1 tablespoon fresh lemon juice
- 10 fresh cilantro leaves
Dipping Sauce
(great for sweet potato chips)
- 1/2 cup low-sodium soy sauce
- 1/4 cup rice wine vinegar
- 2 tablespoons finely grated ginger
- 2 tablespoons chopped green onion
- 2 medium cloves garlic, minced
- 2 teaspoons sugar
- 1 teaspoon sesame oil
General TSO Chicken Sauce
- 1 teaspoon sesame oil
- 1 1/2 tablespoons rice vinegar
- 2 tablespoons rice wine
- 3 tablespoons white sugar
- 3 tablespoons soy sauce
- 1 tablespoon tomato paste
- 6 dried whole red chilies
- 1/2 cup diced onion
- 1 tablespoon minced garlic
- 1 tablespoon orange zest
- 2 tablespoons minced green onions
Buffalo Sauce
- 4 cloves minced garlic
- 2 1/2 tablespoons butter
- 1/2 cup Franks Red Hot Sauce
- 2 tablespoons coarse sea salt or Kosher
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 1 teaspoon cayenne pepper
Cocktail Sauce
- 1/4 cup of ketchup
- 1/4 cup Chili Sauce
- 2 tablespoons horseradish
- 1/2 teaspoon Worcestershire sauce
- 1 lemon (a squirt)
- Tabasco sauce, to taste
Blooming Onion Dipping Sauce
- 1/2 cup mayonnaise
- 2 teaspoons ketchup
- 2 tablespoons horseradish
- 1/4 teaspoon paprika
- 1/4 teaspoon sea salt
- 1/8 teaspoon dried oregano
- Dash of black pepper
- Dash cayenne pepper
Pizza/Spaghetti Sauce
- 2 tablespoons Olive oil
- 1 (28oz) Can tomato Puree
- 1 teaspoon dried onion
- 1/2 teaspoon dry basil
- 1/2 teaspoon dry oregano
- 1/2 teaspoon dry thyme
- 1/4 teaspoon dry parsley
- 3 cloves fresh minced garlic
- 1/2 tablespoons minced carrot
- 1 1/2 tablespoons honey
- 2 tablespoons brown sugar
Combine all ingredients in a pot and heat until nearly boiling. Be careful of hot splattering sauce. Reduce heat to simmer and thicken sauce. About 10-15 minutes. Stir often to avoid splattering. Do not cover while cooking.
Garlic Butter Dipping Sauce (Great for Lobster Fish and Stake)
- 1 cup butter
- 1 tablespoons minced garlic
- 1 tablespoons lemon juice
- 1 teaspoon black pepper
- 2 teaspoon dried cilantro
Melt 1 tablespoon of butter in a saucepan over medium heat. Add the garlic; cook and stir until starting to brown, about 3 minutes. Add the remaining butter and reduce heat to low. Stir to melt the butter, then mix in the lemon juice, pepper and cilantro. Let it steep over low heat for about 10 minutes. Strain before serving.
